Poached Peaches With Raspberry Sauce Recipe

  1. Parboil peaches in boiling water 1 minute; peel and leave whole.
  2. In saucepan, boil together water, sugar and vanilla bean for 3 to 4 min.
  3. Remove bean and poach fruit a few at a time in syrup over low heat about 5 min.
  4. Remove to glass or possibly china serving dish.
  5. In electric blender, puree raspberries and strain; puree through fine sieve to remove all seeds.
  6. Add in Kirsch.
  7. Pour over fruit and refrigeratewell.
  8. Garnish with slivered almonds.
