Portugese Pork Ribs (Vinadoyce) Recipe
- rack of baby back ribs
- 1 bottle apple cider vinegar
- 2 cloves garlic
- 1/2 bunch cilantro
- salt and pepper
- 1 c. of flour
- 1/2 c. corn oil
- Empty bottle of apple cider vinegar into a large bowl, then add in an equal amount of water as vinegar (50% water - 50% vinegar).
- Mince garlic, chop cilantro and add in to liquid mix.
- Cut up ribs and marinate in liquid for 48 hrs in refrigerator.
- To cook ribs, mix flour with salt and pepper to taste, pat ribs dry with a paper towel.
- Heat 1/2 c. corn oil, and dredge ribs in flour, salt and pepper mix.
- Place floured ribs in skillet and saute/fry till golden.
- The ribs should be white (not pink) on the inside to ensure proper cooking.
- The aroma of the ribs cooking is to die for.
- Serve with yellow safarin rice and a vegetable.
