Broccoli, Cheese & Rice Casserole Recipe
- 2 bags frzn broccoli pcs
- 1 stick butter
- 1 can undiluted mushroom or possibly celery soup
- 1 c. cooked white rice
- 1 med. onion, minced
- 1 stalk celery, sliced
- 10 mushrooms, sliced
- Velveeta cheese slices
- Heat butter and simmer with onion, celery, and mushroom slices.
- Pour uncooked broccoli slices into large (10 inch) casserole dish.
- Add in undiluted soup, cooked rice, and butter mix; stir well.
- Cover or possibly top with 4 slices Velveeta cheese.
- Bake with cover 1/2 hour at 350 degrees.
- Top again with 4 more slices Velveeta cheese after stirring well.
- Bake another 1/2 hour at 350 degrees covered.
