Shrimp And Oyster Gumbo

  1. Heat oil in
  2. a heavy saucepan or Dutch oven over medium heat; add flour very slowly, stirring constantly with a wooden spoon until flour
  3. is
  4. very brown.
  5. Add onion and garlic; cook until onion is
  6. soft but not brown.
  7. Add tomatoes, fish stock, shrimp and bay leaves; simmer 30 minutes, stirring frequently. Add seafood seasonings; simmer 45 minutes.
  8. Add okra, salt and pepper; continue to
  9. simmer 5 minutes.
  10. Add oysters and simmer 10 minutes ortntil
  11. edges of oysters curl. Just before serving, stir in gumbo file.
  12. Serve over rice.
