Magic Peanut Butter Middle Cookies
- 1 1/2 c. all purpose flour
- 1/2 c. unsweetened cocoa
- 1/2 tsp. baking soda
- 1/2 c. sugar
- 1/2 c. brown sugar
- 1/2 c. softened margarine
- 1/4 c. peanut butter
- 1 tsp. vanilla
- 1 egg
- 3/4 c. peanut butter
- 3/4 c. powdered sugar
- In a small bowl, combine flour, cocoa and baking soda. Blend well. In large bowl, beat sugar, brown sugar, margarine and 1/4 c. peanut butter until light and fluffy. Add vanilla and egg and beat well.
- Stir in flour mixture until blended; set aside. In small bowl, combine 3/4 c. peanut butter and 3/4 c. powdered sugar; blend well.
- Roll into 1 inch balls.
- For each cookie, shape dough around each peanut butter ball.
- Place 2 inches apart on baking sheet (ungreased). Flatten with hand. Bake at 375u0b0 for 7-9 minutes.
- Decorate as desired.
