Annasi Curry Recipe
- 1 med Sized ripe pineapple, cleaned, peeled and diced Oil for cooking
- 2 x Onions, minced (100 g.)
- 1 x Stem of lemon grass A few sprigs of curry leaves
- 1 1/2 c. Thick coconut lowfat milk, (extracted from 1/2 grated coconut) (360 ml.)
- 1 tsp Mustard pwdr, (5 g.)
- 1 tsp Cinnamon pwdr, (5 g.)
- 6 x Dry red chillies, powdered A healthy pinch of turmeric pwdr Salt to taste
- 1 tsp Fennel seeds, roasted and powdered (5 g.)
- HEAT oil in a pan and fry half the onions, lemon grass and curry leaves until the onions turn brown.
- Add in the remaining ingredients, except the fennel pwdr, and simmer until done.
- Sprinkle the fennel pwdr and remove from heat.
- Serve warm with rice.
