English Cherubs
- 1 c. firmly packed brown sugar, divided
- 1/2 c. butter or margarine, softened
- 1 1/3 c. all-purpose flour
- dash of salt
- 2 eggs
- 1/2 c. sugar
- 1 tsp. vanilla extract
- 1/4 tsp. salt
- 1/2 c. flaked coconut
- 1 c. chopped pecans
- Combine 1/2 cup brown sugar, butter, flour and dash of salt in a medium mixing bowl.
- Mix until well combined (mixture will look dry).
- Press in bottom of a greased 9-inch square pan.
- Beat eggs until foamy.
- Add remaining brown sugar, 1/2 cup sugar, vanilla and 1/4 teaspoon salt.
- Mix well.
- Stir in coconut and pecans. Spread over layer in pan.
- Bake at 350u0b0 for 30 minutes or until top is set and lightly browned.
- Cool; cut into 1 1/2-inch squares.
- Makes 3 dozen.
