Tasty Tomato and Fruity Chicken Casserole
- 8 boneless and skinless chicken thighs. (readily available in New Zealand)
- 35 pkg. dried onion soup mix
- 14-1/8 oz. can tomatoes in juice
- 2 tsp. sweet basil
- 2 tbsp. white wine vinegar
- 1 cup mixed dried fruit such as raisins, apricots and prunes
- 1 cup sauvignon blanc
- other dry wine
- 1/4 cup honey
- 1 cup apple juice concentrate
- fruit juice will suffice as a substitute
- 1 tsp. dried chicken stock
- 1/2 tsp. salt
- 1 onion chopped
- 2 tbsp. each of cornflour (cornstarch)
- 2 tbsp. water
- Place all ingredients (except cornflour and water) in large nonstick frypan or skillet and bring to boil then simmer for 20 minutes.
- Add cornflour and water mixture then continue simmering for 30-35 minutes until chicken is cooked and casserole has thickened and reduced slightly in volume.
- Serve with mashed potatoes or rice and favourite selection of greens and other vegetables.
