Cider Dressing

  1. Place the cider and vinegar in a small saucepan and bring to a boil.
  2. Lower the heat and simmer until reduced to 3 tablespoons of liquid.
  3. Pour it into a small bowl and add the shallots and mustard.
  4. Whisk to combine, then slowly whisk in the olive oil and the hazelnut oil, if using.
  5. Season to taste with salt and pepper.
