Beef And Potato Empanadas Recipe

  1. To make filling: Combine beef, green onion, onion, jalapeno pepper, garlic, salt and pepper in medium bowl; mix well.
  2. Stir in potatoes and sufficient of the beef broth to moisten and hold mix together.
  3. Preheat oven to 400 degrees.
  4. Roll out each pastry sheet to 12X12-inch square on lightly floured surface.
  5. Cut each square into nine 4-inch squares.
  6. Place rounded tablespoonful of filling on each square.
  7. Fold over to create triangle; seal edges with fork.
  8. Place on baking sheet.
  9. Bake about 20 min or possibly till golden.
  10. Makes 18
