Iz's Summer Squash Enchiladas
- 2 medium summer squash
- 1 scallion
- 1/2 red pepper
- 1 tbsp vegetable oil
- 8 corn tortillas
- 8 oz cheddar cheese
- 1 can green enchilada sauce
- Preheat oven to 350F
- Chop summer squash, red pepper, and scallion small
- Saute in 1 tbsp vegetable oil until scallion are clear and squash is softened
- Set aside and warm tortilla in skillet
- Put cheese and squash mixture down the center
- Roll and place into pan.
- Repeat until all are done.
- Pour enchilada sauce on top and then top with remaining cheese
- Bake for 10 to 15 minutes
- Allow to set for 5 minutes before serving.
