Seven-Layer Mexican Dip
- 3 medium avocados
- 2 tsp. lemon juice
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 c. mayonnaise
- 1 c. sour cream
- 1 pkg. taco seasoning mix
- 2 cans (10 oz. each) Mexican bean dip
- 1 large bunch green onions with tops, chopped
- 2 medium tomatoes, seeded and chopped
- 2 cans (3 1/2 oz. each) pitted ripe olives, chopped
- 8 oz. sharp Cheddar cheese, shredded
- Mash avocados in a bowl with lemon juice, salt and pepper. In a small bowl, combine mayonnaise, sour cream and taco seasoning.
- On a large flat plate, spread bean dip in a large circle.
- Top with avocado mixture, then sour cream mixture. Follow this with onions, then tomatoes, followed by olives.
- Cover all with grated cheese.
- Chill until ready to serve with corn chips.
