Double Mint Chocolate Chip Cookies
- 2 pkg. (10 oz. each) mint chocolate chips
- 2-1/2 cup all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2/3 cup butter
- 1 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 1 tsp. vanilla
- Melt one package of chocolate chips and set aside.
- Mix flour, baking soda, and salt and set aside.
- Cream butter and sugars.
- Add eggs, vanilla, and melted chocolate.
- In several additions add the flour mixture.
- Stir in remaining bag of chocolate chips.
- Bake 8 to 10 minutes at 350F.
- The cookies will look slightly underdone.
