Chicken Lo Mein
- 2 tablespoons canola oil
- 1 tablespoon sesame oil
- 12 cup oyster sauce
- 12 cup soy sauce
- 4 tablespoons rice vinegar
- 1 lb chicken tenders, cut in 3 pieces
- 1 teaspoon white pepper
- 1 teaspoon five-spice powder
- 2 teaspoons fresh ginger, grated
- 1 small onion, finely chopped
- 2 tablespoons garlic, Crushed
- 8 ounces sliced mushrooms
- 1 (14 ounce) bag coleslaw mix
- 1 (8 ounce) bag carrots, Shredded
- 1 (16 ounce) bag stir fry vegetables, your choice
- 2 teaspoons cornstarch
- 1 lb lo mein noodles or 1 lb whole wheat spaghetti
- Cook Lo Mein Noodles or Spaghetti, using directions on package.
- Drain Keep Warm Mix Oyster Sauce, Soy Sauce and Rice Vinegar.
- Use half to marinate chicken in a plastic bag, set aside other half.
- Heat oils in pan, remove chicken from bag and sprinkle with white pepper, discard marinade.
- Cook chicken till slightly browned on each side.
- Set chicken aside, in a good size bowl; keep warm.
- In the same pan add garlic, onion and ginger, cook one minute; add mushrooms and cook 4 - 5 minutes.
- Add Cole Slaw mix and carrots, cook till tender.
- Add Frozen vegetable bag, stir to cook till desired tenderness.
- Place Vegetables and noodles in bowl with chicken, mix.
- Mix cornstarch with remaining marinade and heat in same pan for I minute, till slightly thickened then pour over Lo Mein and mix.
