Poppy Seed Muffins
- 3/4 c. sugar
- 1/4 c. butter or margarine, softened
- 1/2 tsp. finely shredded orange peel
- 2 eggs
- 2 c. all-purpose flour
- 2 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/4 tsp. ground nutmeg
- 1 c. milk
- 1/2 c. light raisins
- 1/2 c. chopped pecans
- 1/4 c. poppy seed
- In medium bowl beat together sugar, margarine and orange peel with electric mixer 30 seconds.
- Add eggs and beat well.
- In medium bowl, stir together flour, baking powder, salt and nutmeg. Add flour mixture and milk alternately to beaten mixture, beating on low speed.
- Stir in raisins, pecans and poppy seed.
- Line muffin pans with paper baking cups.
- Fill 3/4 full.
- Bake in 400u0b0 oven for 15 to 20 minutes or until golden brown.
- Makes about 18 muffins.
