Black Walnut Pound Cake
- 1 c. butter, softened
- 3/4 c. shortening
- 3 c. sugar
- 6 eggs
- 4 c. sifted cake flour
- 1/4 tsp. salt
- 1/2 tsp. baking powder
- 1 c. milk
- 1 tsp. vanilla extract
- 1 tsp. black walnut extract
- 2 Tbsp. oil, warmed
- 2 c. chopped black walnuts
- Cream butter, shortening and sugar in large mixer bowl until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Sift flour, salt and baking powder together.
- Reserve 1/4 cup flour mixture.
- Add remaining flour mixture alternately with milk to creamed mixture, beating well after each addition. Stir in flavorings.
- Drizzle warm oil over walnuts in bowl.
- Add reserved flour mixture; toss to coat.
- Stir into batter.
- Spoon into greased and floured 10-inch tube pan.
- Bake at 300u0b0 for 1 1/4 hours or until cake tests done.
- Yield:
- 16 servings.
