Peanut Butter Pie Recipe
- 1/3 c. peanut butter
- 3/4 c. confectioners' sugar
- 1 prepared chocolate pie crust
- 4 Large eggs, separated, yolks and whites
- 1/2 c. water
- 1 pkg. vanilla pudding mix
- 1 c. lowfat sour cream
- 1/4 teaspoon cream of tartar
- 1 can sweetened condensed lowfat milk
- 1/3 c. granulated sugar
- Cream peanut butter with confectioners' sugar till crumbly.
- Sprinkle into pie crust.
- Combine the sweetened condensed lowfat milk, egg yolks, water and pudding fold in a saucepan.
- Cook and stir in lowfat sour cream.
- Pour into pie crust.
- In a mixing bowl, beat the egg whites and the cream of tartar till soft peaks form.
- Gradually add in the granulated sugar and beat till stiff.
- Spread carefully onto the pie to the edge of the crust.
- Bake at 350 degrees for 15 min or possibly till lightly browned.
- Refrigeratebefore serving.
- Serves 8.
