Holiday Sweet Potato Coconut Casserole
- 3 cups mashed sweet potatoes
- 1 cup sugar
- 14 cup evaporated milk
- 2 eggs, beaten
- 1 teaspoon vanilla
- 12 cup butter, cubed
- 1 cup coconut
- 1 cup chopped nuts
- 1 cup brown sugar
- 12 cup butter, softened
- 12 cup flour
- Preheat oven to 300 degrees .
- Peel and cube sweet potatoes.
- Boil until tender, then mash.
- Add next 6 ingredients and mix with an electric mixer.
- Pour into greased 8x8 baking dish.
- Mix topping ingredients and crumble on top of potato mixture.
- Bake 30 minutes.
