Chicken Quesadilla

• 1 chicken breast
• 2 fresh flour tortillas
• 14 cup scallion
• 14 cup cilantro
• 1 cup monterey jack and cheddar cheese blend

1. fire grill chicken -- and tortillas.
2. slice chicken.
3. add: cheese.
4. chicken.
5. scallions.
6. cilantro.
7. fire grill quesadilla on both sides until cheese is melted and golden brown.
8. *serve with island salsa.
