Taco Chicken with Rice
- 2 whole Bell Peppers
- 1/2 whole Red Onion
- 1 teaspoon Olive Oil
- 1 envelope (about 1 Oz. Packet) Low Sodium Taco Seasoning
- 1 cup Chicken Broth
- 1 whole Rotisserie Chicken
- 1 whole Avocado
- 2 Tablespoons Lime Juice
- 4 cups Prepared Brown Rice
- 1.
- Slice bell peppers and onion into strips.
- 2.
- Saute peppers and onions in until soft, about 5-10 minutes.
- Add half of the package of taco seasoning.
- Saute for another minute or so.
- Add chicken broth and simmer on low.
- 3.
- While peppers and onions are cooking, take chicken off the bone and shred.
- Add chicken and remaining taco seasoning to the peppers and onions.
- Simmer for about 10 minutes.
- 4.
- Cut avocado into chunks and mix with lime juice.
- 5.
- Serve chicken, peppers, and onions over brown rice.
- Top with avocado and lime.
- Enjoy!
