Summer Cherry Sorbet
- 1 14 cups water
- 1 14 cups sugar
- 2 cups sour cherries (pitted)
- Combine the water and sugar in a small sauce pan, and reduce over medium high heat until you have 1 1/4 cups of simple syrup.
- Meanwhile, puree cherries in a blender until smooth, and then strain through a sieve to get out all the pulp.
- Combine simple syrup and cherry juice in a bowl, and chill until cold.
- Freeze the mixture in your ice cream maker according to manufactures directions.
- Serve immediately, or scoop into a plastic container with a lid, then place in the freezer to harden up.
