Summer Cherry Sorbet

  1. Combine the water and sugar in a small sauce pan, and reduce over medium high heat until you have 1 1/4 cups of simple syrup.
  2. Meanwhile, puree cherries in a blender until smooth, and then strain through a sieve to get out all the pulp.
  3. Combine simple syrup and cherry juice in a bowl, and chill until cold.
  4. Freeze the mixture in your ice cream maker according to manufactures directions.
  5. Serve immediately, or scoop into a plastic container with a lid, then place in the freezer to harden up.
  6. Enjoy!
