Bulgur Salad With Grapes and Feta Cheese

  1. Combine bulgur with 1/2 tsp salt and boiling water.
  2. Cover and let stand 30 minutes or until bulgur is tender.
  3. In large bowl, whisk together 2 tbsp fresh lemon juice and 1 tbsp olive oil; season with coarse salt and ground pepper.
  4. Add 2 tbsp minced scallion, 3/4 cup halved seedless grapes, 1/2 cup each toasted chopped walnuts and crumbled feta.
  5. add bulgur; toss.
