Bulgur Salad With Grapes and Feta Cheese
- 12 cup bulgur
- 12 teaspoon salt
- 34 cup boiling water
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- salt and pepper
- 2 tablespoons scallions
- 34 cup halved seedless grapes
- 12 cup toasted chopped walnuts
- 12 cup crumbled feta
- Combine bulgur with 1/2 tsp salt and boiling water.
- Cover and let stand 30 minutes or until bulgur is tender.
- In large bowl, whisk together 2 tbsp fresh lemon juice and 1 tbsp olive oil; season with coarse salt and ground pepper.
- Add 2 tbsp minced scallion, 3/4 cup halved seedless grapes, 1/2 cup each toasted chopped walnuts and crumbled feta.
