Ham And Corn Chowder
- 3 or 4 slices salt pork, cut into small pieces
- 3/4 c. chopped onion
- 2 medium potatoes, peeled and cubed
- 1 1/2 c. cream style corn
- Salt and black pepper, to taste
- 1 1/2 c. half and half
- 1 to 1 1/2 c. chopped, cooked ham
- Paprika, optional
- Fry the salt pork until browned.
- Remove the salt pork from the pan and set aside.
- Saute the onions in the fat.
- Cook the potatoes in salted boiling water until soft.
- Drain the cooked potatoes, saving about 1 1/2 cups of the liquid.
- In large soup pot or Dutch oven, combine the salt pork, sauteed onion, potatoes, potato water, and the corn.
- Bring to a boil and immediately reduce the heat and simmer gently for 5 to 10 minutes.
- Season to taste with salt and black pepper.
- Add the cream slowly.
- Add the ham and simmer for another 5 to 10 minutes.
- After the chowder is spooned into the serving bowls, sprinkle with paprika, if desired.
