Sweet Muffins (with Homemade Baking Mix)

• 2/3 cup milk
• 2 tbsp vegetable oil/butter/margarine, melted
• 1 egg
• 2 cups baking mix
• 1/3 cup sugar

1. Heat oven to 400F.
2. Line 12 regular-size muffin cups with paper baking cups.
3. In medium bowl, beat milk, oil and egg with wire whisk or fork until blended.
4. Stir in baking mix and sugar just until moistened.
5. Spoon batter into muffin cups.
6. Bake 15 to 18 minutes or until golden brown.
