Botvinia (Cold, Green Vegetable Soup With Fish) Recipe
- 1 x Cucumber large, peeled, halved,seeded, & diced
- 1 1/2 lb Spinach leaves fresh, washed
- 6 Tbsp. Frsh lemon juice
- 1 1/2 lb Sorrel leaves, fresh
- 3 Tbsp. Horseradish root, fresh Grated
- 1 tsp Salt
- 3/4 tsp Sugar
- 1/2 lb Crab meat
- 1 1/2 lb Poached sturgeon, in 1" pieces.
- 1 1/2 lb Poached whitefish in 1" pieces.
- 1 c. Scallions sliced
- 1/4 c. Onion minced
- 1 x Garlic clove chopped
- 2 ounce Vodka
- 1 1/2 quart Beer
- 1 1/2 quart Kvas (see attached recipe)
- Boil 3 qts of water in a large pan.
- When boiling briskly add in the spinach and the sorrel.
- Cook uncovered at a brisk boil for 6-8 min.
- drain water off, wash vegetables in cool water, then puree in blender.
- cold to room temperature.
- Combine the other ingredients in bowl, except for the beer and vodka.
- When mixed well slowly add in the beer and the vodka stirring constantly.
- Refrigeratefor a minimum of 2 hrs before serving.
