Spicy Black-Eyed Pea Dip
- 1/2 bell pepper
- 2 stalks celery
- 1 large onion
- 1 tsp. black pepper
- 1 1/2 tsp. hot pepper sauce
- 1/2 c. catsup
- 1 clove garlic, crushed
- 1/2 c. bacon drippings
- 1 tsp. salt
- 3 chicken bouillon cubes
- 1/4 tsp. nutmeg
- 1/2 tsp. cinnamon
- 2 (15 oz.) black-eyed peas
- 1 (15 oz.) can Ro-tel tomatoes
- 1 tsp. sugar
- 3 Tbsp. flour
- In a medium saucepan combine bell pepper, celery, onion, black pepper, hot pepper sauce, catsup, salt, boullion cubes, nutmeg and cinnamon.
- Over low heat, cook and stir until boiling and cubes are dissolved completely.
- Add peas, tomatoes, garlic and sugar and simmer 30 minutes.
- Combine bacon drippings with flour and stir into peas.
- Cook 10 minutes.
- Stir well and serve hot with large corn chips.
- This is unique and delicious way to insure good luck for the coming year by eating black-eyed peas on New Year's Day or you could leave out the bacon drippings and flour and serve as a vegetable.
