Stir-Fried Chicken and Eggplant with Mayonnaise and Ponzu
- 150 grams Chicken thigh meat
- 1 Eggplant
- 1 Green pepper
- 1 1/2 tbsp Mayonnaise
- 2 tbsp Ponzu
- 1 Salt and pepper
- Cut the chicken into bite-sized pieces and sprinkle salt and pepper.
- Slice the eggplant lengthwise into sixths, and then cut in half.
- Slice the green pepper lengthwise to make strips.
- Heat one tablespoon of mayonnaise in the frying pan.
- Add the chicken pieces and stir fry.
- Once the chicken cooks through, add another 1/2 tablespoon of mayonnaise, eggplant and green pepper.
- Stir fry some more.
- When the mayonnaise has coated everything evenly, add ponzu sauce and cook until eggplant wilts.
- Adjust the taste with salt and pepper.
