Stir-Fried Chicken and Eggplant with Mayonnaise and Ponzu

  1. Cut the chicken into bite-sized pieces and sprinkle salt and pepper.
  2. Slice the eggplant lengthwise into sixths, and then cut in half.
  3. Slice the green pepper lengthwise to make strips.
  4. Heat one tablespoon of mayonnaise in the frying pan.
  5. Add the chicken pieces and stir fry.
  6. Once the chicken cooks through, add another 1/2 tablespoon of mayonnaise, eggplant and green pepper.
  7. Stir fry some more.
  8. When the mayonnaise has coated everything evenly, add ponzu sauce and cook until eggplant wilts.
  9. Adjust the taste with salt and pepper.
