Chicken Cacciatore
- 1/2 medium green pepper
- 1/2 medium onion, chopped
- 1 clove garlic
- 1 broiler-fryer, cut in pieces
- 1/4 c. flour
- 1 tsp. salt
- 3 Tbsp. oil, divided
- 1/4 tsp. pepper
- 1 c. tomatoes
- 1 cube chicken bouillon
- 3/4 tsp. oregano
- 1 bay leaf
- spaghetti
- Parmesan cheese
- Combine flour, salt and pepper in plastic bag.
- Add one piece of chicken at a time; shake to coat.
- In a large skillet, heat 2 tablespoons oil.
- Brown chicken on all sides.
- Heat other oil and saute onion, bell pepper and garlic.
- Stir in tomatoes, bouillon, oregano and bay leaf.
- Add the chicken pieces and let simmer 20 minutes.
- Stir occasionally.
- Discard bay leaf.
- Serve over spaghetti, tossed with Parmesan cheese.
