Southwestern Potato Skins

  1. BAKE potatoes at 400F (200C) for 45 - 60 minutes or until tender.
  2. Cut in half lengthwise and scoop out and reserve for making mashed potatoes later.
  3. BROWN lean ground beef with barbecue sauce.
  4. TOP potato skins with ground beef mixture and shredded cheese.
  5. Broil just until cheese melts.
