Southwestern Potato Skins
- 4 baking potatoes
- 1/2 lb. lean ground beef King Sooper's 1 lb For $3.99 thru 02/09
- 1/4 cup Kraft Regular BarBQ Sauce
- 1 cup Cracker Barrel Shredded Tex Mex Cheese
- BAKE potatoes at 400F (200C) for 45 - 60 minutes or until tender.
- Cut in half lengthwise and scoop out and reserve for making mashed potatoes later.
- BROWN lean ground beef with barbecue sauce.
- TOP potato skins with ground beef mixture and shredded cheese.
- Broil just until cheese melts.
