Spinach Ricotta Dumplings
- 1 c. Italian flavored bread crumbs
- 1 pkg. frozen chopped spinach, thawed and squeezed dry
- 1 (16 oz.) Ricotta cheese
- 1/4 c. Parmesan cheese
- 1 tsp. minced dry onion or 2 green onions, chopped fine
- 1/4 c. flour
- 1/2 tsp. garlic powder
- 1/2 tsp. salt
- 1/2 tsp. pepper
- Mix ingredients with 2 beaten eggs.
- This mixture is very sticky.
- Shape into balls (as you would meatballs).
- Roll lightly in flour; put on cookie sheet lined with wax paper and chill well. In large kettle, bring water to a boil.
- Gently drop in dumplings, one at a time.
- They sink to the bottom.
- Reduce heat to simmer after dumplings rise to top, simmer about 10 minutes. Remove gently with slotted spoon to serving dish.
- Cover with Quick Tomato Sauce and serve.
