Chocolate Zucchini Cake
- 2 c. peeled, grated zucchini
- 1/2 c. soft butter
- 1 3/4 c. sugar
- 1/2 c. Crisco oil
- 2 eggs
- 1/2 c. sour cream
- 1 tsp. vanilla
- 2 1/2 c. flour
- 4 Tbsp. cocoa
- 1 tsp. baking soda
- 1 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 tsp. baking powder
- 1 (12 oz.) bag chocolate chips (mini)
- Peel and grate zucchini.
- Set aside to drain all water.
- Cream together the butter, sugar, oil, eggs, sour cream and vanilla. Stir in remaining ingredients, except zucchini and chocolate chips. Fold in zucchini.
- Pour into greased pan, 13 x 9 x 2-inch. Sprinkle mini chocolate chips over cake.
- Bake at 325u0b0 for approximately 45 minutes.
- Do not preheat oven!!
