Grilled Lamb Loin Chops

  1. Season: 8 lamb loin chops cut 1 1/2 inches thick with: Salt, Fresh-ground black pepper.
  2. Prepare a medium-hot bed of coals.
  3. Brush and clean the grill.
  4. Brush the chops with oil and put them on the grill.
  5. Cook for 3 minutes and rotate 45 degrees if desired, for grill marks.
  6. Turn the chops after 6 minutes and cook until medium rare, about another 4 minutes.
  7. Let rest for 4 minutes before serving.
  8. To grill lamb rack chops, count 3 per person, and season as above, but cook over a hot fire for only about 3 minutes on each side.
  9. Grill pork chops over medium coals.
  10. One-inch-thick pork chops will take about 10 to 12 minutes to cook.
