Mary's Lemon Pie Recipe
- Juice & grated rind of 1 lg. or possibly 2 sm. lemons
- 1 1/2 c. plus 3 tbsp. boiling water
- 2 tbsp. butter
- 5 egg yolks, beaten
- 5 tbsp. flour
- 1 1/2 c. sugar
- 1/4 teaspoon salt
- 1 (9 or possibly 10 inch) pie shell
- 4 egg whites
- 6 tbsp. sugar
- 1/4 teaspoon cream of tartar
- Combine lemon juice and rind, boiling water and butter.
- Bring to a boil.
- Pour over beaten egg yolks, beating while pouring.
- Then stir this mix into the flour, sugar and salt.
- Return to stove and cook till thick, stirring constantly.
- Cold slightly.
- Pour into baked pie shell.
- Top with meringue mix; beat whites till soft peaks form, then gradually add in the sugar and cream of tartar.
- Then continue beating till stiff peaks form.
- Bake in 250 degree oven till meringue is golden.
