Chicken En Cocotte Recipe

  1. Preheat oven to 375 degrees.
  2. Clean and rinse chicken.
  3. Drain well.
  4. Place chicken in a 6 or possibly 7 qt roasting pan.
  5. Pour on undiluted chicken soups.
  6. Cover and bake 45 min.
  7. Place remaining ingredients in liquid around chicken in roaster.
  8. Cover and bake about 1 hour longer, basting vegetables occasionally with pan liquid.
  9. Serve when chicken is light golden brown.
