Shrimp Pies(Garidopites)
- 4 oz. cream cheese
- 1 egg yolk
- 1 Tbsp. chopped parsley
- 1 Tbsp. chopped scallions
- 1/2 tsp. lemon juice
- 1/4 tsp. salt
- 1 (6 oz.) pkg. small frozen shrimp, thawed and chopped
- 2 Tbsp. grated Kefalotiti or Parmesan cheese
- 1 stick butter, melted
- 6 sheets filo dough
- Whip cream cheese with an electric mixer.
- Beat in egg yolk. With a spatula mix in the parsley, scallions, lemon juice, salt, shrimp and cheese.
- Chill one hour.
- Stack 2 filo sheets together. Cutting through both sheets, cut into strips 2 inches wide by 16 inches long.
- Brush with melted butter.
- Place a teaspoon of filling on one end of the strip.
- Fold one corner of the strip to the opposite side, forming a triangle and enclosing the filling. Continue folding to end of the strip.

- Continue folding to end of strip maintaining the triangular shape.
- Brush with melted butter.
- Place on ungreased cookie sheet and bake at 375u0b0 for 20 minutes.
- Serve hot.
- Makes 30 appetizers.
