Taco Skillet
- 1 (8 oz.) pkg. sausage links
- 1 Tbsp. margarine
- 1 medium onion, chopped
- 1 envelope taco seasoning
- 2 1/2 c. water
- 1 c. long grain rice
- 2 medium tomatoes, seeded and chopped
- 1 small green pepper, chopped
- 1 (15 1/2 oz.) can kidney beans, drained
- 1 (2 1/4 oz.) can sliced ripe olives, drained
- 1/2 c. shredded cheese
- tortilla chips
- Cook sausage links as directed on package, using a 10-inch skillet; drain and remove from skillet.
- Heat margarine in skillet until hot.
- Cook onion until tender.
- Stir in seasoning mix and water.
- Heat to boiling, stirring occasionally, until liquid is absorbed and rice is tender.
- Stir in tomatoes, pepper, beans and olives.
- Arrange sausage on top.
- Sprinkle with cheese and cover and heat through.
- Serve with tortilla chips.
