Cashew Chicken
- 2 chicken breasts sliced
- 1/4 cup dry sherry or apple juice
- 1 1/2 tbsp cornstarch
- 1 clove garlic
- 1 tsp salt
- 1/2 tsp curry powder
- 1 lb mushroom slices
- 4 tbsp butter
- 1 cup whipping cream
- 1/3 cup salted cashews
- 1/4 cup chopped parsley
- Mix chicken, sherry, cornstarch, garlic, salt, curry powder.
- Set aside for 15 minutes
- Saute mushrooms with half of butter
- Remove mushrooms and add chicken.
- Cook till Brown
- Add mushrooms
- Add cream.
- Cook, stirring, until cream is boiled down and thickened
- Transfer to serving dish.
- Sprinkle with cashews and parsley.
