Coconut Delight
- 1 c. flour
- 1 1/2 c. pecans, chopped
- 1 stick margarine, melted
- 1 (8 oz.) cream cheese
- 1 c. confectioners sugar
- 2 small containers Cool Whip
- 2 boxes instant vanilla pudding mix
- 3 c. milk
- 1 pkg. frozen coconut
- Mix
- flour,
- 1/2
- cup pecans and margarine.
- Press into baking dish to form crust;
- bake at 350u0b0 for 15 minutes.
- Cool completely.
- Mix
- cream
- cheese
- with confectioners sugar; add one box of Cool Whip.
- Mix thoroughly; spread over crust.
- Mix instant pudding with milk;
- stir
- until
- thick.
- Spread
- this mixture over the cream cheese
- layer.
- Sprinkle a small amount of shredded coconut on the pudding
- layer.
- Spread
- one box of Cool Whip on top, then sprinkle
- the
- remaining
- coconut and 1 cup of pecans on top of the Cool Whip.
- Chill before serving.
