Red Snapper(With Sesame Vegetables)
- 1 Tbsp. vegetable oil
- 1 Tbsp. dark Oriental sesame oil
- 1 Tbsp. minced fresh ginger root
- 2 garlic cloves, minced
- 1 c. sliced onion
- 1 c. thinly sliced red and green peppers
- 1 c. stringed snow peas
- 2 Tbsp. rice wine vinegar
- 2 Tbsp. low sodium soy sauce
- 2 tsp. sesame seed
- 4 (5 oz.) red snapper fillets or other firm-fleshed fish such as halibut
- Preheat oven to 375u0b0.
- In large nonstick skillet over high heat, heat oils.
- Add ginger root and garlic; saute 30 seconds. Add onion and saute 30 seconds.
- Add peppers and cook 1 minute. Reduce heat to medium and stir in snow peas, vinegar and soy sauce.
- Let bubble 1 minute.
- Stir in sesame seed and remove from heat.
- Arrange snapper fillets in baking pan.
- Evenly spoon vegetable mixture over fish.
- Bake 12 to 15 minutes until fish are just cooked through.
