Chocolate Banana Nut Cookies
- 2 2/3 c. all-purpose flour
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 c. light brown sugar, packed
- 1/2 c. sugar
- 2 sticks salted butter, softened
- 1 lg. egg
- 1 tsp. banana extract
- 3/4 c. mashed ripe bananas (1 med. banana)
- 1 (12 oz.) pkg. semi-sweet chocolate chips (about 2 c.)
- 1 c. chopped walnuts
- Preheat oven to 300u0b0. In medium bowl, combine flour, baking soda and salt. Mix well.
- Set aside. In a large bowl with an electric mixer, blend sugar at medium speed. Add butter and mix while scraping down the sides of the bowl. Add eggs, extract and bananas. Beat at medium speed until smooth. Add the flour mixture, 1 c. of the chocolate chips and the walnuts and blend at low speed until just combined.
