Florence Fabricant's Maple Syrup Pie
- 3 eggs
- 1 1/2 cups pure maple syrup
- 3 tablespoons melted sweet butter
- A baked eight-inch pie shell
- 1 cup heavy cream, whipped
- Preheat oven to 400 degrees.
- Beat eggs until well-blended.
- Beat in maple syrup and butter.
- Pour the mixture into the baked pie shell, place in the oven and bake 25 minutes, just until the filling is set.
- Serve while still warm with whipped cream.
