Kamo-nanban Soba Noodles with Leeks

  1. Cut the leek into 5 cm.
  2. Finely chop the spring onions.
  3. Cut the duck into bite-sized portions.
  4. Put the duck into a bowl and add soy sauce.
  5. Rub well and leave for a while.
  6. Grill the leek on a griddle until well charred.
  7. Dredge the duck with kudzu starch.
  8. Cook the frozen soba noodles.
  9. Put the dashi stock and bring to a boil.
  10. Add the ingredients and the prepared duck.
  11. After the duck is cooked through, add the leek and simmer quickly.
  12. Transfer the soba noodles first into serving bowls.
  13. Pour the dashi soup and top with the duck and leeks.
  14. Garnish with chopped spring onion.
  15. Sprinkle with ichimi or shichimi spice.
