Middle Eastern Fruit Salad with Philly Dollop
- 100g dried apricots
- 100g dried figs
- 100g dried peaches
- 1/2 teaspoon vanilla bean
- 2 x 1cm wide strips of lemon zest Safeway 4 ct For $5.00 thru 02/09
- 1 teaspoon honey
- cold water
- 1 star anise
- 1/2 cinnamon stick
- 2 whole cloves
- 20g whole, blanched almonds
- Delicious Philly Dollop
- 100g tub PHILADELPHIA Spreadable Cream Cheese
- 2 tablespoons icing sugar, sifted
- 2 tablespoons orange juice
- 1 teaspoon vanilla essence
- Place all fruit salad ingredients except nuts in a medium saucepan and just cover with cold water.
- Slowly bring to a simmer.
- Cook for 15 minutes over low heat.
- Remove from heat, allow to cool and stir in almonds.
- Remove star anise and cinnamon stick.
- Serve topped with delicious Philly Dollop, with a sprinkle of ground nutmeg or cinnamon.
- DELICIOUS PHILLY DOLLOP:
- Beat Philly*, icing sugar, orange juice and vanilla essence with a wooden spoon until smooth.
- Dollop over your favourite fresh or stewed fruits!
