New Potato and Avocado Miso Butter Stir-fry

  1. Wash the new potatoes well.
  2. Wrap in plastic wrap and microwave for 3 to 4 minutes until a bamboo skewer pierces through easily.
  3. Cut into bite sized pieces without peeling.
  4. Peel the avocado and cut into bite sized pieces.
  5. Combine the seasonings.
  6. Heat butter and potatoes in a pan.
  7. Saute until the potatoes are golden brown over medium-high heat.
  8. The key is to not move the potatoes around too much.
  9. Add the avocado and saute quickly.
  10. Add the combined ingredients, turn off the heat and mix together.
  11. Done.
  12. You could also sprinkle with black pepper.
