Creamy Spinach
- 1 tsp. oil
- 1/2 small red onion, sliced
- 125 g (1/2 of 250-g pkg.) Philadelphia Light Brick Cream Cheese Spread, cubed
- 1 Tbsp. skim milk
- 1/4 tsp. pepper
- 2 pkg. (142 g each) baby spinach leaves
- Heat oil in medium saucepan on medium-high heat.
- Add onions; cook and stir 3 to 4 min.
- or until crisp-tender.
- Stir in cream cheese spread, milk and pepper; cook on low heat 1 to 2 min.
- or until cream cheese is melted and sauce is well blended.
- Add 1/3 of the spinach; cook 2 min.
- or just until wilted, stirring frequently.
- Add remaining spinach, in batches, cooking and stirring 1 to 2 min.
- after each addition just until wilted.
