Cheesy Salsa-Mini Meatloaves

  1. Heat oven to 400 degrees F.
  2. Reserve 3/4 cup cheese and 1/2 cup salsa for later use.
  3. Mix remaining cheese and salsa with remaining ingredients just until blended.
  4. Press into 12 muffin pan cups sprayed with cooking spray; place on foil-covered baking sheet.
  5. Use back of spoon to make indentation in centre of each meatloaf.
  6. Bake 20 to 25 min.
  7. or until done (160F).
  8. Top with reserved salsa and cheese; bake 3 min.
  9. or until cheese is melted.
