Mom'S No Guilt Quiche
- 1 (10-inch) deep dish pie shell, unbaked
- 8 oz. egg substitute
- 1/4 c. broccoli flowerets, chopped finely
- 1/4 c. cauliflower flowerets, chopped finely
- 1/4 c. frozen peas, thawed
- 1/4 c. kernel corn, drained
- 1/4 c. tomato, diced
- 1/2 c. Cheddar or Jack cheese, shredded (fat-free)
- Preheat oven to 350u0b0.
- In a large bowl, combine egg and all vegetables.
- Stir. Add cheese and stir again.
- Pour into unbaked pie shell. Bake at 350u0b0 for 40 minutes.
- Test doneness by inserting knife in center of quiche.
- If knife comes out clean, quiche is done.
- Otherwise return to oven and check again in 10 to 15 minutes.
- Let stand 10 minutes before cutting.
- Serve with warm breadsticks.
