Pesto Bruschetta

  1. Cut the French bread in half lengthwise.
  2. This recipe uses only half of the loaf at a time.
  3. Brush the olive oil over the bread.
  4. Place under the broiler for about 3 minutes to warm the oil and bread so that it soaks into the warm bread.
  5. Spread the pesto evenly over the bread.
  6. Place tomato slices evenly on the bread and salt and pepper the tomato slices only.
  7. Place back under the broiler for 2 minutes more.
  8. Take out and spread Parmesan cheese evenly.
  9. Place back under the broiler until the cheese is melted and begins to brown slightly.
  10. Serves 6 to 8 (depending on how big you cut them).
