Pesto Bruschetta
- 1/2 loaves French Bread, Cut Lengthwise
- 2 Tablespoons Olive Oil
- 1/2 cups Pesto (homemade Or Your Favorite Store Bought)
- 8 slices Tomato
- 1 dash Salt
- 1 dash Pepper
- 1/2 cups Parmesan Cheese, Shredded
- Cut the French bread in half lengthwise.
- This recipe uses only half of the loaf at a time.
- Brush the olive oil over the bread.
- Place under the broiler for about 3 minutes to warm the oil and bread so that it soaks into the warm bread.
- Spread the pesto evenly over the bread.
- Place tomato slices evenly on the bread and salt and pepper the tomato slices only.
- Place back under the broiler for 2 minutes more.
- Take out and spread Parmesan cheese evenly.
- Place back under the broiler until the cheese is melted and begins to brown slightly.
- Serves 6 to 8 (depending on how big you cut them).
