Vegan Goddess Dressing

  1. In a small saucepan bring 2 cups water to boil.
  2. Remove from heat, add cashews, cover, and set aside for 30+ minutes.
  3. Drain cashews.
  4. Place all ingredients in a blender along with some fresh herbs-chives, tarragon and chervil or parsley for a traditional Green Goddess, or substitute the lemon juice for lime juice and add jalapenos, green onions, and cilantro for something with a bit more kick.
  5. Blend until smooth.
