Green Beans And Potato Casserole For 6
- 1 1/2 c. cooked green beans
- 1 c. diced boiled potatoes
- 1/2 c. sliced celery
- 4 slices bacon
- 2 Tbsp. finely chopped onion
- 1 Tbsp. bacon drippings
- 1 Tbsp. flour
- 1 c. undiluted Carnation evaporated milk
- 1 c. shredded process American cheese
- 1/4 c. cheese
- cracker crumbs
- Combine green beans, potatoes and celery in 1-quart casserole. Fry bacon, drain and crumble.
- Saute onion in bacon drippings. Stir in flour.
- Add evaporated milk slowly; stir constantly.
- Cook until thickened and smooth; stir constantly.
- Add cheese; stir until melted.
- Pour over vegetables in casserole; mix well. Sprinkle 1/4 cup cheese, cracker crumbs and crumbled bacon over top.
- Bake in moderate oven (350u0b0) about 30 minutes.
